Roasted Broccoli and Cauliflower

Several years ago, I discovered the magic that is roasting your veggies. So simple. So easy. So good. Seasoning as simple as salt and pepper makes a winner, but add a little fresh grated parmesan and you’ve launched your veggies to a whole new plane.

Take the florets off of your broccoli and cauliflower. I like to peel the broccoli stalks and include them in the roast as well. They’re super sweet and get nice and tender with the roasting process. Drizzle your olive oil over the veggies and season with the spices. Sprinkle your cheese. I like Parmesan but you could get fancy and go with an Asiago, Pecorrino or Regianno if you’re out to impress. Go ahead. Get crazy. These veggies are your stage. Cheers!

Roasted Broccoli and Cauliflower

Ingredients

  • 1 bunch brocolli
  • 1 head cauliflower
  • ¼ Cup Olive oil
  • Sprinkle salt and pepper
  • Optional seasoning variations: Cavender’s Greek Seasoning, Lawry’s Season Salt, 1 drop Young Living Thyme Vitality essential oil mixed in with the olive oil.

Instructions

  1. Preheat oven to 400F
  2. Chop veggies and arrange on baking sheet.
  3. Drizzle olive oil and selected seasonings over veggies and toss to coat evenly.
  4. Roast for 15 minutes then turn and sprinkle selected cheese.
  5. Serve immediately.
