Strawberry Lemongrass Sorbet

So in our house, we TRY to curb the sugar as much as possible. This goal often cramps the dessert style a bit, even thought we truly love berries and fruits as dessert. I say that, but the truth is that my husband just hides stashes of ice cream in the freezer and eats it after the kids go to bed – I pick my battles. This sorbet, though. SO GOOD. And I can feel good about giving it to the kids because it has the tiniest amount of sugar in it possible. I’ve also used honey, agave, stevia and sucanat in the simple syrup and it’s all good. I posted this with the most straight forward method for simple syrup but you can customize it to your hearts’ content.
Sorbet is the unsung hero of desserts. It really is. It’s SO EASY to make and you can control the sweetness very easily, allowing the sweetness of the fruit to really shine through.
You can freeze your own fruit or just grab a couple bags from the stand up freezer at the store. If you do go to the trouble to grow and freeze your own berries, the flavor is off the charts. Let’s make some dessert!
First, make a simple syrup by boiling equal parts water and sugar together until it’s dissolved. Pull it off the heat and add 5 drops Young Living Lemongrass Vitality Essential Oil to the pan. Let it cool. Throw your berries into a food processor or VitaMix and dump the simple syrup over the top. Add a little water to help the blades turn and process that down until it’s well blended.
Scoop all that goodness out of the mixer and freeze for half an hour before serving! I usually whip this up before we sit down to dinner and by the time we are ready for dessert, it is too. This is where it gets fun…you can eat this blessed stuff as is and it’s amazing. It’s gluten and dairy free, which helps a lot of people. If that’s not important to you, scoop a big spoonful of this stuff into a wine glass, dump some blueberries over it and pour a healthy dash over heavy cream over the whole thing. This looks too good to eat, but you will. It tastes too good not to.

Strawberry Lemongrass Sorbet

Ingredients

  • 2 pounds frozen strawberries
  • ½ C Sugar
  • ½ C Water
  • 5 Drops Young Living Lemongrass Vitality Essential Oil
  • ½ C Water for blending

Instructions

  1. In a small saucepan, heat water and sugar until sugar is dissolved. Remove from heat. Add Lemongrass Vitality
  2. Add the syrup to all remaining ingredients in food processor or VitaMix and blend until smooth. Use additional water if necessary in the blending process.
  3. Transfer sorbet into freezable container. Cover and freeze at least 30 minutes before serving.
